Keto Super Green Soup
This green soup offers a creative approach to eating spinach and cauliflower. All of the ingredients are blended together after cooking. Adding coconut milk to the mixture makes this dish more creamy and flavorful!
What You'll Need
- 1 Non-Stick Pan
- 1 Food Processor
Ingredients
- 1 Tbsp Olive Oil
- 1 cup Cauliflower florets
- ¼ Onions (diced)
- 2 cloves Garlic (chopped)
- 2 cups Spinach
- ¼ cup Water
- ¼ cup Coconut Milk
- pinch Salt
- pinch Pepper
Instructions
- Heat olive oil in a non-stick pan.
- Add the cauliflower and cook until tender.
- Add the onions and garlic, saute until translucent and fragrant.
- Add the spinach.
- Add water and coconut milk.
- Bring to simmer and season with salt and pepper.
- Allow the soup to cool and pour in a food processor.
- Process until smooth. Serve.
