Keto Chicken Florentine
A super easy, full-flavored keto-friendly, low-carb Butter Chicken recipe that rivals any restaurant or takeout. This delicious, hearty dish is perfect for cold weather and will satisfy the whole family even if they are not on a Keto diet.
What You'll Need
- 1 Good quality Pan
Ingredients
- 1 Chicken Leg
- 1 Tbsp Butter
- 1 Tbsp Shallots (Minced)
- 1½ Cups Chicken Stock
- 2 Tbsp Heavy Cream
- 1 Cup Spinach (Fresh)
- Salt (To taste)
- Pepper (To taste)
Instructions
- Melt butter in a pan then sprinkle shallots.
- Add chicken on top of the shallots.
- Add enough stock to barely cover the chicken.
- Cover and poach over low heat for 20-25 minutes.
- Take chicken out of the pan and set aside.
- Reduce pan juices to approximately a quarter of a cup.
- Add spinach and heavy cream.
- Return chicken into the pan.
- Serve hot.
