      Notes

      Chicken Swap:
If you prefer chicken over pork, feel free to swap out the boneless pork rib for boneless chicken breast or thigh. Cut the chicken into similarly sized pieces and marinate them in your favorite keto-friendly seasoning or marinade before skewering. The chicken will cook up tender and juicy, delivering a delightful alternative to the pork.
      Veggie Medley:
Don’t limit yourself to just zucchini, eggplant, onion, bell pepper, and tomato. Get creative and add your favorite low-carb veggies to the skewers. Try mushrooms, cherry tomatoes, or even chunks of low-carb cheese like halloumi or paneer. The combination of different veggies adds a variety of textures and flavors to your kebab skewers.
