      How to make Keto Queso

      Time needed: 10 minutes

      Make the perfect Keto Queso

      1. Melt the butter

        Start by gently melting the butter over a medium heat

      2. Add the veg

        Once your butter has melted, toss in the onion and peppers.
        Give them a couple of minutes and when they’ve started to soften, pour in your heavy cream and whisk in the Xantham gum.

      3. Now for Cheese

        As soon as the cream begins to bubble, it should have started to thicken…
        Add the cheeses, starting with the cheddar – a little at a time until it’s melted into the mix.

      4. Season and serve

        When all the cheese is mixed in well, just add some salt and pepper to taste.
        You can serve it warm as it is, or chill it in a covered dish in the fridge until required.
        (It will be fine in the fridge for a couple of days)

      Rediculously easy to make with just 6 ingredients, (only 3 if you prefer them plain without the Mexican spice).

      Or you could try my favourite… quesadillas – (grilled tortillas with melted cheese inside).

      whatever way you prefer them, you’ll thank me later.

      • Add in your onions and sweet peppers.
      • Whisk in your xanthan gum.
      • Once your cream is thick and bubbling, slowly stir in your cheddar cheese – one small handful at a time.
      • Do the same thing with the Gruyere cheese.
      • Add salt and pepper to taste.

      Jalapeño Heatwave:
      If you’re a fan of spicy flavors, consider adding finely chopped jalapeños to the queso for a fiery kick. The heat of the jalapeños works wonderfully with the rich cheese base.
