How to make Keto Cheesy Bacon Soup
Time needed: 20 minutes
Make the perfect Cheesy bacon soup…
- Heat the Olive Oil
Begin by heating 3/4 of your Olive Oil in a large deep pan.
As it’s heating, toss in your garlic
When it’s hot, add in the chopped cauliflower - Add the Chicken Stock
Now pour in the 2 cups of chicken stock (I sometimes use a medium tin of chicken soup or chicken broth – just check the ingredients for additives, sugars and other non-keto ingredients, and remember to adjust any nutritional values)
Also, add 1 cup of water at this stage.
Turn the heat up to high and bring the liquid to a boil – stirring frequently. - Add Cream
As it comes to the boil, add in the heavy whipping cream and turn the heat down to medium.
- Make a thickening agent
In a seperate bowl, mix together the remaining Olive oil with the Xantham Gum.
Use a whist and do this by hand rather than a blender or food processor as you do not want to start it thickening at this point. - Combine
Drop the thickening mix into the soup and stir it well.
it will start to thicken… - Add cheese
As the soup begins to thicken, add your cheddar cheese – not all at once, but stir in a little at a time, allowing each to melt into the soup.
- Finish with Bacon
When your cheese is all in, finally, add the bacon bits.
Whisk these in to distribute them well.
Serve hot emmediately and enjoy!

- 1 tsp Garlic (Minced)
- 1 Medium Cauliflower Head (Chopped)
- 2 Cups Chicken Broth
- 1 Cup Water
- 1 Cup Heavy Whipping Cream
- 1 tsp Xantham Gum
- 1½ Cups Cheddar Cheese (Shredded)
- 4 Tbsp Bacon Bits
Instructions
- In a deep pan, heat up 3/4 of the olive oil and the garlic on medium heat.
- Once hot, add in the cauliflower.
- Pour in the chicken broth and water, bringing it to a boil over high heat.
- Once it’s boiling, stir in the heavy whipping cream then turn the heat down to medium.
- In a separate bowl, whisk together the rest of your oil and xanthan gum to make a slurry.
- Drop your slurry into the soup and stir. It should start to thicken.
- Little by little, add in your cheese, stirring it into the soup so it melts.
- Whisk in your bacon and serve!
