What You’ll Need
- 1 Pot
- 1 Food Processor
Ingredients
- 2 Cups Cauliflower Florets
- 1 Tbsp Cream Cheese (Softened)
- 1 Tbsp Olive Oil
- 1 Clove Garlic (Minced)
- pinch salt
- pinch pepper
Instructions
- Boil the Cauliflower for 15 minutes – or until soft
- Drain and transfer to a food processor together with all the other ingredients
- Pulse until smooth
- Serve hot

Not the biggest fan of cauliflower, but this makes a reasonable substitute for potato mash.
I’d seen these cauliflower recipes before, but hadn’t tried them because I was sceptical about using it as a substitute for potato.
